Eight Treasure Pudding Best Love

INGREDIENTS
|
- 600 g Glutinous rice
- 60 g Lard
- 75 g Sugar
- 25 g Almond, walnut, chestnuts or lotus seeds
- 6 tablespoons Candied or dried fruit
- 75 g Sweet bean paste
|
HOW TO PREPARE
|
- Wash the rice and place in a saucepan.
- Cover with 1 cm water.
- Bring to the boil and simmer gently
for 11-12 minutes.
- Add half the lard and all the sugar,
turn and stir until well mixed.
- Greased the sides of a large heatproof
basin or bowl heavily with the
remaining lard (lard must be cold).
- Stick the nuts and candied or dried
fruits of your choice in a pattern
on the sides of the basin in the lard,
arranging the remainder at the bottom
of the basin.
- Place a layer of sweetened rice in the
basin, then spread a thinner layer
of sweet bean paste on top of the rice.
- Repeat the layers, finishing with a
rice layer.
- Cover the basin with foil, leaving a
little room for expansion.
- Place the basin into a steamer and
steam steadily for 1 hour 10 minutes
until cooked.
- Invert the basin on to a large round
heated serving dish to turn out the pudding.
- Decorate with extra candied fruits,
if you like.
